Is designed for determination of quality of gluten, wheat grains as well as bread-making and pasta wheat flour due to their ability to resist compressive load deformation between two flat surfaces within 30 sec. The measuring process with device of GDM (Gluten Deformation Measurement)-ZM is fully automated and takes no more than 35 sec; the measuring results are immediately shown on the digital display. GDM-ZM is provided with a unified for all devices calibrating number. Conceptual difference of GDM--ZM device from series-produced GDM--Z is design simplification which provides improved reliability and noiseless operation of the device.

Method of gluten quality determination with the device of GDM series is standardized (GOST 13586.1-68 and 27839-88). The device is simple and easy-to-use, with improved reliability, does not require long-term special instructions for the operator. The device accuracy allows to uniquely determine the gluten quality group when solving controversial issues which may occur due to the analysis with its indicators positioned at the boundary of two quality groups. With high accuracy, the device determines the quality of weak gluten in wheat grains for optimal selection of improving agents in order to confer higher bread-making properties.
