Conceptual difference of GDM--ZM device from series-produced GDM--Z is design simplification which provides improved reliability and noiseless operation of the device.

Method of gluten quality determination with the device of GDM series is standardized (GOST 13586.1-68 and 27839-88). The device is simple and easy-to-use, with improved reliability, does not require long-term special instructions for the operator. The device accuracy allows to uniquely determine the gluten quality group when solving controversial issues which may occur due to the analysis with its indicators positioned at the boundary of two quality groups. With high accuracy, the device determines the quality of weak gluten in wheat grains for optimal selection of improving agents in order to confer higher bread-making properties.
